Superfood Brownie Bites!

Happy Valentine’s Day! Ahh, the day we celebrate love. One of my biggest awakenings from my cancer journey was a realignment of my priorities and the realization (even though there are thousands of songs about this) that Life is about Love. I encourage you to express it openly, freely, fall madly, get your heart broken, and dance in the joy when it is reciprocal. Because that is what life is all about!

To help you enjoy a little sweetness while feeding your body solid nutrition, I have a little recipe for you. If you’ve been following me for a while, you know that I have been making various energy ball snacks for years, switching up the ingredients every time. This one is quite possibly my favorite so far. These taste like little brownie bites! They are so yummy, not overly sweet but still satisfy those afternoon sweet cravings.

These little babies are full of nutrient-dense super foods, healthy fats, and fiber; plus they are dairy-free and refined sugar-free (depending on your protein powder). You will absolutely need a food processor to make them but they’re ready in minutes!

Super Food Brownie Bites
Makes 16 1-1/4” balls

Ingredients
10 medjool dates, pitted
½ cup raw almonds
2 Tbsp almond butter
2 Tbsp raw cacao powder
1 scoop collagen powder (optional)
1 Tbsp chia seeds
1 Tbsp hemp hearts
½ tsp vanilla extract
1 scoop Vegan Vanilla Shakeology or similar protein powder
3 Tbsp water
½ cup organic puffed rice

Directions
In a food processor fitted with the S Blade, whirl up the dates and raw almonds until finely broken down. Add all the rest of the ingredients except the puffed rice. Whirl it all up until well combined. Add the puffed rice and pulse until the rice is broken into small bits.

Dump mixture into a small mixing bowl. With clean hands, grab a small handful and squeeze in your fist to press together, then roll between your hands into a ball, making a 1-1/4” diameter (or thereabouts) ball. Keep in the fridge in an air tight container. Enjoy!
